Strawberry sponge

Preparation method
- Whisk the strawberry juice with the sugar and albumin.
- Mix in the beaten egg yolk.
- Mix in the double-sifted flour and starch.
- Bake at 175°C.
Serving suggestions
- As a basis for a cake or pastry, combined, for example, with red fruits, citrus fruits or rhubarb.
- As a garnish in a dessert, by crumbling and drying the sponge.
