Strawberry truffles

A nice contrast between a creamy strawberry filling and a crunchy chocolate outer layer with sugar. Add a little food coloring to the sugar to make red sugar.

Ingredients

strawberry purée

lemon juice

sugar

butter

As needed:

 

white chocolate, tempered

As needed:

 

red coloured sugar

Preparation method

  • Bring the strawberry purée, lemon juice and sugar to the boil.
  • Cool the mixture to 4°C.
  • Mix the purée with the butter.
  • Pipe strips with the mixture and freeze.
  • Cut the strips into pieces of 4 cm long
  • Dip the pieces in the tempered white chocolate and then roll them in the red coloured sugar.
  • Store in a cool place.

Serving suggestions

  • As friandise.
  • As a component in a composition with e.g. coffee, red fruits and hazelnuts.
  • As a component in a composition with e.g. vanilla, rhubarb or citrus fruits.
