Stuffed artichoke hearts with smoked sesame seeds
In this recipe the flavour of the artichokes is enhanced with smoked sesame seeds. With this technique you are assured an elegant result and the offcuts are used to create a delicious stuffing.

Preparation method
- Remove the artichoke hearts with a small cutter.
- Finely brunoise the offcuts and briefly fry these in a little oil.
- Add the chopped shallot and the sesame seeds and fry briefly.
- Warm the artichoke hearts and stuff them with the filling.
- Serve immediately.
Serving suggestions
- As part of a starter or main course.
- Perfect with tomato, capers, and pinenuts.
- Delicious with tuna, sherry vinegar, and samphire.
