Ingredients

artichoke hearts, cooked

tbsp

sunflower oil

shallot, finely chopped

1

tbsp

smoked sesame seeds

1

tbsp

chives

Preparation method

  • Remove the artichoke hearts with a small cutter.
  • Finely brunoise the offcuts and briefly fry these in a little oil.
  • Add the chopped shallot and the sesame seeds and fry briefly.
  • Warm the artichoke hearts and stuff them with the filling.
  • Serve immediately.

Serving suggestions

  • As part of a starter or main course.
  • Perfect with tomato, capers, and pinenuts.
  • Delicious with tuna, sherry vinegar, and samphire.
