Stuffed bread soldiers

While being very easy to prepare, this component has a myriad of applications, ranging from a garnish for a soup to a 'dipper' with a soft-boiled egg. This variant is prepared with truffle and parmesan cheese. You can invent countless variations on this recipe!

tramezzini or long slices of white bread

Preparation method

  • Generously spread one of two equal-sized slices of bread with truffle tapenade.
  • Cover with the 2nd and push down lightly to 'seal'.
  • Cut to the desired size and fry on both sides in clarified butter.
  • Cut into thin strips with a sharp serrated knife and serve immediately or briefly heat later just before serving.

Serving suggestions

  • As a garnish for salads, e.g. with a green salad with a poached or deep-fried egg.
  • As a garnish in a soup with wild mushrooms and tarragon.
  • As part of a composition with a 5-minute egg.
  • You can easily vary the flavour by substituting the truffle tapenade with classic pesto, tomato tapenade, sweet pepper purée, etc.
