macadamia nuts, pistachio nuts, etc.

Preparation method

  • Make a cream from ingredients such as strained yoghurt, mascarpone, chocolate ganache or a savoury substance.
  • Use a piping bag to fill each raspberry just over the rim.
  • Chop the nuts of your preference and brown, if necessary.
  • Dip the raspberry, filled side down, first into the sugar water
  • and then into the nuts, making sure that you do not bruise the raspberry.


Serving suggestions

  •  As a component in a dessert, e.g. with mango and citrus fruit.
  • As an amuse-bouche in a dessert or a friandise.
