Preparation method

  • Boil together all the ingredients, except for the beech mushrooms.
  • Cut the beech mushrooms loose.
  • Remove the boiling mixture from the heat and add the mushrooms.
  • Cover with a lid and leave the mixture to cool.
  • Store chilled until needed.

Serving suggestions

  • As part of a cold composition with celeriac, seaweed, potato, or artichoke.
  • As part of a warm composition Jerusalem artichoke, parsnip, or beetroot.
  • As an ingredient in stocks, soups, or sauces.
  • As a component in salads.
