Preparation method

  • Chop the celeriac into 1 cm cubes.
  • Boil the water with the vinegar, sugar, ginger, star anise, and coriander seeds.
  • Pour the hot mixture over the celeriac.
  • Place the entire mixture in a vacuum sealer bag and pull vacuum.

Serving suggestions

  • As an accompaniment to various dishes.
  • As part of a cold or hot dish, such as with potato, roasted onion, or tomato.
  • As a flavour enhancer in dishes, serve with the celeriac and vodka granité component, for instance.
