Preparation method

  • Slice the leeks into small rings and rinse thoroughly with cold water.
  • Boil together all the remaining ingredients, except for the leek.
  • Drain the leek well and transfer to a suitable container.
  • Pour the hot cooking liquid over the leek and leave the leek to cool in it until you are ready to use it.

Serving suggestions

  • Serve as an aperitif snack.
  • Serve as part of an amuse-bouche with, for example, egg cream, trout, and cucumber foam.
