Preparation method

  • For the sweet and sour preserving liquid, boil the vinegar, the sugar, and the spices together until the sugar has dissolved.
  • Remove from the heat and leave the mixture to cool to room temperature.
  • Place the plums and the preserving liquid in a vacuum sealing bag, pull vacuum, and refrigerate for at least 12 hours.

Serving suggestions

  • As a garnish with a pâté (especially a game pâté).
  • As a garnish with poultry.
