Ingredients

avocados, flesh, perfectly ripe

water

glucose

citric acid, powdered

Maldon salt

Preparation method

  • Bring the water to the boil.
  • Combine all other ingredients in a blender and add the boiling water.
  • Blend at high speed until smooth.
  • Strain through a fine sieve and transfer to a squeeze bottle.
  • Store in the refrigerator.

Serving suggestions

  • Delicious with a dessert of dark chocolate, lime and mint.
  • Sublime with mango.
