Preparation method

  • For the basic dressing mix 100g nut oil with 500g peanut oil, vinegar, water, mustard and icing sugar in a blender or with a hand-held blender into a smooth dressing and season with white pepper and salt.
  • Fry the bacon bits in peanut oil. Simmer gently.
  • Stir in the caster sugar.
  • Add the nut oil and the gastrique.
  • Simmer for 45 minutes, stirring occasionally.
  • Pour off the oil and drain on paper towels.
  • Mix the basic dressing with the parsley, chives and sweet bacon bits.
