Preparation method

  • Weigh the couscous in a large bowl.
  • Bring the water, sugar, honey, pinch of salt, and cardamom pod to the boil.
  • Pour over the couscous and add the butter.
  • Cover with cling film and soak for five minutes.
  • Stir the couscous with a fork to loosen it and add the Mediterranean fruits and nuts if you like.
  • Serve immediately.

Serving suggestions

  • As part of a dessert with components of coffee, chocolate, vanilla, or citrus.
  • As part of a savoury composition with poultry.
  • As a component in a breakfast.
