red sweet peppers



garlic, finely chopped



potato, finely diced (brunoise)



onion, finely diced






stock, as desired






salt and pepper

Preparation method

  • Finely dice the sweet pepper (brunoise) and brown with the onion, saffron and garlic.
  • Add the diced potato and a dash of stock, and cook quickly.
  • Transfer to a blender and blend and add (mount with) the olive oil to thicken.
  • Strain through a fine sieve, add paprika and season with salt and pepper.

Serving suggestions

  • As a flavour enhancer for bouillabaisse.
  • Perfect with grilled vegetables, such as fennel, tomato or courgette.
