Preparation method

  • Thoroughly wash the sweet potatoes.
  • Peel the sweet potatoes and chop them into coarse but equally-sized pieces. Wash the pieces again to remove excess starch.
  • Chop the onion in the same way.
  • Gently fry the sweet potatoes, onion, and garlic in a pan with a little olive oil.
  • As soon as everything starts to soften, add the sugar, glucose, and water.
  • Braise in the water and soya sauce over low heat for about ten minutes.
  • Once the sweet potato is cooked, season to taste with a dash of soya sauce, sesame oil, and sesame seeds.

Serving suggestions

  • As part of a composition with components of pork or beef, rice, courgette, or aubergine.
  • As a side dish for an Asian meal.
