blueberry coulis

egg yolk

Greek yoghurt

Preparation method

  • Mix the egg yolk with the custard until you have a smooth mixture.
  • Boil together the milk, blueberry coulis, and sugar.
  • Add to the custard mixture and stir thoroughly.
  • Now cook it as a composition. Leave to thicken on medium heat while stirring.
  • Leave to cool, lightly beat, and add an equal amount of Greek yoghurt.

Serving suggestions

  • As part of a dessert, e.g. with blueberries and honey confectionery.
  • As a filling for blueberry or peach tartelettes.
