Nearly everyone loves nuts, and the cashew is always a favourite. There are many simple ways to give them a unique twist that you will never find in the nuts from the supermarket. Like this one, a special combination of Indian spices and a fresh green herb.

Ingredients

cashew nuts, unroasted

1

tbsp

sesame oil

1

tbsp

tandoori masala

2

tsp

salt

4

tbsp

coriander, finely chopped

Preparation method

  • In a bowl, combine the unroasted cashew nuts with the sesame oil, tandoori masala and salt.
  • Spread the nuts out on a baking sheet and roast them in a 200°C oven for 5-10 minutes. They are done when they are nice golden brown.
  • Allow to cool, and sprinkle the finely chopped coriander over them just before serving.

Serving suggestions

  • As a cocktail snack or side.
  • As a component in a cold starter or main dish with poultry.
