Tandoori yoghurt marinade

The acids in the yoghurt tenderise the meat and produce a delicious tangy flavour. The thin layer of marinade also protects the meat during roasting in the tandoor (oven) where temperatures can reach up to 260°C.

Preparation method

  • Crush and peel the garlic cloves.
  • Mix together all the ingredients.
  • Season to taste with salt.
  • Store the marinade in the refrigerator until use.
  • Cover the meat with the marinade and refrigerate for at least twelve hours. 

Serving suggestions

  • As a marinade for chicken.
  • Cook the meat with the marinade in a sous vide system.
  • Roast the meat with the marinade the traditional way in a tandoor (oven).
