Ingredients

tangerine juice

sugar

agar agar

Preparation method

  • Bring all the ingredients to the boil and cook for three minutes.
  • Pour the mixture through a fine sieve.
  • Set to cool and allow to gel.
  • Mix in a blender until you have a smooth, shiny gel and store in a squeeze bottle.

Serving suggestions

  • As part of a dessert, e.g. with raspberry, chocolate, or banana components.
  • As part of a friandise, e.g. with a chocolate and lemon crumble mousse.
