Ingredients

red cabbage juice

tbsp

Chardonnay vinegar

rose syrup

xanthan gum

Preparation method

  • Blend all the ingredients together using a hand-held blender, making sure to avoid air bubbles.
  • Pour into a squeeze bottle and store until needed.

Serving suggestions

  • In a starter with smoked salmon, crème fraîche and horseradish.
  • In a starter with smoked halibut.
  • In a dessert with red fruit, white chocolate and yoghurt.
