Tomato bread

Popular in Catalunya, easy to prepare, and always a feast if you use the right ingredients. The flavour of the tomato and olive oil make all the difference. Ideally, make with Catalonian country bread, but the Turkish bread that is more readily available works just as well.

Ingredients

flat Spanish country bread or Turkish bread

2

cloves

garlic, cut in half lengthwise

ripe beefsteak tomatoes

 

 

olive oil

 

 

sea salt and black pepper

Preparation method

  • Slice the bread into long, thin slices.
  • Toast on a barbecue or grill.
  • First, flavour the bread by running the cut side of a half clove of garlic across the surface, and follow with half a tomato. Make sure that liberal amounts of juice and tomato flesh are left behind on the bread.
  • Sprinkle with olive oil and season with sea salt and black pepper.

Serving suggestions

  • As part of a selection of tapas.
  • As an accompaniment to a soup or salad.
  • Top with Serrano ham, dry sausage or cheese.
  • Also delicious topped with grilled sweet peppers or other vegetables.
