This is a sweet variant of tomato crisps. The tomato becomes extra crunchy when prepared like this and many dishes benefit from adding a little sweetness to them.

Preparation method

  • Cut the tomatoes into wafer-thin slices using a food slicer.
  • Fill a small sieve with icing sugar and dust the sugar over the tomato slices on both sides.
  • Place the slices on a silicon sheet and dry in an oven or drying machine at 80°C.
  • The icing sugar will first melt into a syrup and then start to crystallise.

Serving suggestions

  • As a snack with amuse-bouches.
  • As part of a cold starter, e.g. with pear, apple, fennel or onion components.
  • As part of a dessert including watermelon.
