Preparation method
- Monder (peel) the tomatoes in boiling water and immediately transfer them to ice water.
- Once peeled, cut the tomatoes into the desired shape. Use a towel to dry the tomatoes lightly.
- Mix them with the dressing, pepper, and salt.
- You could add chopped basil or tarragon.
- Store at 4°C or serve immediately.
Serving suggestions
- As part of a salad buffet.
- As part of a cold starter or combined salad.
- Collect and use the liquid that is released when peeling the tomatoes.
- Variation tip: replace French dressing with another dressing, such as a tomato dressing, a lime dressing, or a balsamic vinegar dressing.
