Ingredients

shallots

Madeira

balsamic vinegar

truffle paste

truffle oil

olive oil

Preparation method

  • Finely dice the shallot (brunoise) and then gently fry in a little oil.
  • Add all the ingredients, except for the olive oil and truffle oil, to the shallots.
  • Reduce to a treacly substance.
  • Lastly, add the olive oil and truffle oil.

Serving suggestions

  • This is a lovely dressing for carpaccio.
