Preparation method

  • Cut the tuna meat into fine dice (brunoise).
  • Season with the shishimi tōgarashi and salt.
  • Finally, add the rice oil.
  • Shape the meat into small burgers.
  • Pan-fry, barbecue or grill on the Big Green Egg.

Serving suggestions

  • As a component in a main dish, e.g. with components of avocado, radish and ginger.
  • As a component of a deluxe hamburger, e.g. with tomato, watercress and an onion component.
