Ingredients

turnips

clarified butter

cornflour

icing sugar

ground cardamom

Preparation method

  • Blend the cornflour, icing sugar, and cardamom powder in a bowl and mix with two teaspoons of water.
  • Grease a frying pan with a little clarified butter.
  • Peel the turnips and cut into slices of about 2mm using a mandolin or meat slicer.
  • Dip the turnip slices in the cornflour mixture and arrange in the pan overlapping like roof tiles.
  • Bake the biscuits on low heat until golden brown on both sides.
  • Serve immediately.

Serving suggestions

  • Variation tip: deep-fry the biscuits for a crispy garnish.
  • In a composition with fish such as halibut, cod, or turbot.
  • In a composition with components of lamb, cabbage, or mustard.
