hazelnut oil

Preparation method

  • Turn the turnips, so that they are all the same size.
  • Place them in a mixing bowl and mix with the hazelnut oil, honey, and salt.
  • Place in a suitable vacuum sealer bag and pull vacuum.
  • Cook in a sous-vide system for 30 minutes at exactly 85°C.
  • Place the cooked turnip in a pan with the chicken stock and use this to glaze the turnips.
  • Serve immediately.

Serving suggestions

  • In a composition with a firm white fish or lamb.
  • In a composition with radish, white radish, and crustaceans.
