smoked Maldon salt

Preparation method

  • Clean the turnips and cut them into the desired shape. In the photo they have been cut using a cutter.
  • Blanch the turnips for four minutes and plunge them immediately into iced water.
  • Drain off the water from the cooled turnips.
  • Sprinkle generously with the smoked Maldon salt.
  • Place in a vacuum bag, pull vacuum, and allow to 'mature' in the refrigerator.

Serving suggestions

  • As a garnish in salads.
  • As a vegetable side dish served with components of pork belly, fennel, chicory, or leek.
  • As a vegetable side dish served with components of scallops, potato, or cauliflower.
