Ingredients

milk

vanilla pod

ml

whipping cream

ml

sugar water (1:1)

Preparation method

  • Mix all the ingredients well and pour into a vacuum sealer bag.
  • Pull vacuum and leave to infuse for 24 hours.
  • Pass through a sieve into a large container.
  • Put the pipe of a small aquarium pump into the liquid and start the pump.
  • This will create large air bubbles. Spoon a generous amount of the air bubbles on top of a dessert.

Serving suggestions

  • As the finishing touch for a dessert with red fruits and homemade muesli.
  • As a component in a dessert with apricots, banana, coffee, peach, mango, and figs.
