Vegan ‘cheese’ sauce

Vegan semi-manufactured products are rapidly improving in quality and taste. This sauce uses vegan mozzarella to bind it and add flavour. The recognisable cheese flavour is enhanced by nutritional yeast flakes. These have a light cheesy aroma and contribute a wealth of umami flavours.

Ingredients

plant-based cooking cream, vegan

vegan mozzarella

Preparation method

  • Bring the vegan cooking cream to the boil with the bay leaf.
  • Add the vegan mozzarella and stir until dissolved.
  • Stir the nutritional yeast flakes into the sauce.
  • Season to taste with lemon juice, nutmeg, cayenne pepper, and salt.

Serving suggestions

  • As a cheese sauce for a vegan moussaka or lasagne.
  • As the basis for a vegan cheese fondue.
  • As the basis for a vegan pasta dish.
