shallot, finely diced

vegan mayonnaise

curry powder

smooth vegan mustard

Preparation method

  • Lay the firm tofu between tea towels and apply pressure so the liquid is squeezed out of the firm tofu..
  • Mix the diced shallot with the mayonnaise, curry powder, and mustard.
  • Crumble the firm tofu into pieces of about 0.5cmx0.5cm.
  • Mix with the mayonnaise and season to taste with salt and chopped parsley.
  • Store the egg mayonnaise in the refrigerator.

Serving suggestions

  • As part of a bread-based composition, for instance with fried wild mushrooms.
  • On a bagel with smoked carrot.
  • As part of a bread-based composition, for instance with pickled cucumber, radish, and watercress.
