Vegan 'Frankfurter sausage' made from carrot

The carrot is marinated in kecap manis (a sweet Indonesian soya sauce), which gives it a darker exterior and a savoury flavour. The smoking process takes care of the rest. The process as a whole gives the carrot a firm bite.

Preparation method

  • Peel the carrots and cut to the shape and size of a Frankfurter sausage.
  • Round off the edges with a turning knife.
  • Blanch for seven minutes in salted water.
  • Cool immediately in iced water.
  • Pat the carrots dry with kitchen paper.
  • Next, place them in a vacuum bag with the kecap manis, pull vacuum, and leave to marinate for 12 hours.
  • Remove from the vacuum bag and pat dry.
  • Smoke the ‘sausages’ for five minutes at approximately 70°C in a smoker.
  • Then briefly fry in oil until golden brown all over.

Serving suggestions

  • Serve in a soft bread roll with mustard, sauerkraut, and fried onions.
  • Serve with coleslaw, raisins, and ketchup.
  • Vary it by using different marinades, e.g. the Korean barbecue marinade.
