Preparation method

  • Preheat the oven to 200°C.
  • Sprinkle the carrots with salt and wrap them in aluminium foil.
  • Bake in the hot oven for 50 minutes, then leave to cool in the foil.
  • Rinse the salt off the carrots and pat dry.
  • Cut the carrots into slices as thin as possible on a mandolin or meat slicer.
  • Smoke the carrot slices cold in the smoker for ten minutes.
  • Dress with olive oil and lemon juice.

Serving suggestions

  • Serve as a vegan variant of a bagel with smoked salmon. Build using the components: bagel, vegan lemon mayonnaise, smoked carrot, and chives.
  • In a composition with components of potato, capers, dill, and shallot.
  • As part of a salad, e.g. with lettuce, bell pepper, and tomato.
