Preparation method

  • Rinse the celeriac and chop into 2x2mm julienne.
  • Blanch the celeriac. Use a towel to dry the celeriac.
  • Finely cut the apple into 2x2mm julienne.
  • In a bowl, mix the apple and celeriac julienne with the lemon juice.
  • Add the mayonnaise and sour cream and mix thoroughly.
  • Season to taste with salt and pepper.
  • Roast the walnuts in the oven set for approx. 3 minutes, until golden-brown.
  • Chop the walnuts into large chunks and add to salad.
  • Store at 4°C.

Serving suggestions

  • As part of a salad buffet.
  • As part of a cold starter or combined salad.
  • Variation tip: replace the mayonnaise with another dressing, such as a yoghurt dressing, a lime dressing, a Riesling dressing, a Caesar dressing, or a hazelnut and yuzu dressing.
