A variation on peanut butter, sweetened with honey. Delicious with cheese or on nut bread toast.

Preparation method

  • Dry-roast the walnuts in the oven for 15 minutes at 150°C. They are done when they are a nice golden brown.
  • Blend the walnuts with the salt and the walnut oil until fine.
  • Add the honey, continue to blend, and then taste. Add additional honey and salt as needed.
  • Store the walnut butter in sterilised jars or vacuum bags. Here, we serve the walnut butter in tubes to allow the guests to dispense their own doses.

Serving suggestions

  • As a component of a breakfast or breakfast buffet.
  • As part of a cheese dessert.
  • As an amuse-bouche on paper-thin toasted nut bread. Finish with Maldon salt.
