whipping cream

mushroom oil

agar agar

gelatin

Preparation method

  • Bring the stock and the cream to the boil.
  • Soak the gelatin in cold water.
  • Add the agar agar to the stock and cream mixture and bring to the boil whilst stirring.
  • Dissolve the gelatin in the heated mixture.
  • Mix the oil through the mixture as you would do in a mayonnaise.
  • Pour the mixture into a siphon and use one cartridge to pressurise.
  • Warm the siphon in a water bath before serving.

Serving suggestions

  • In a composition with chicken, langoustine, or other types of mushrooms.
