Warm potato salad

A warm potato salad that you can vary with endlessly. In this recipe, we add crispy fried smoked bacon, shallot, and chives.

As needed:

 

salt and pepper

Preparation method

  • Wash the potatoes and cook them in the skin in water seasoned with salt.
  • Peel the potatoes and cut into slices 2mm thick.
  • Finely dice (brunoise) the smoked bacon into 5mm pieces.
  • Fry the smoked bacon in the olive oil until brown.
  • Once the bacon is nearly crispy, add the finely chopped shallots and take the pan off the heat.
  • Add the mustard, white wine vinegar, and stock.
  • Mix this mixture with the potatoes.
  • Season to taste with salt and pepper.
  • Finish the salad with the chives.
  • Serve warm. 

Serving suggestions

  • Use the salad as part of a warm starter or an entremets.
  • Try using different types of mustard such as Dijon mustard, English mustard, Bavarian mustard, or different types of Dutch mustard.
  • Instead of using chicken stock, use a different stock such as beef stock, vegetable stock, or lamb stock.
  • Instead of using chives, use other green herbs such as parsley, basil, dill, tarragon, or chervil.
