A structural variation on the familiar Watermelon Martini cocktail which is made from watermelon and vodka. In this recipe we have infused neat cubes of seedless watermelon with vodka and sugar syrup.

ripe watermelon, preferably seedless



sugar water (1:1)




Preparation method

  • Peel the watermelon and cut into neat cubes, preferably without seeds.
  • Place the cubes in a container that fits in your vacuum machine and add the sugar water and vodka.
  • Vacuum pump the bag three or four times so that the cubes are fully impregnated with the syrup.
  • Refrigerate the cubes and place on crushed ice just before serving.

Serving suggestions

  • Serve the watermelon as a special aperitif.
  • Serve as part of a dessert, e.g. with lemon grass, citrus fruit or red fruit.
