Whole roast chicken

A classic and extremely delicious dish, which also makes a perfect starting point for endless variations. This version is stuffed with soft cheese, but can also be stuffed with only flavour enhancers (e.g. lemon and fresh herbs).

Preparation method

  • Clean the chicken and season on the inside with pepper and salt.
  • Mix the soft cheese with the sliced garlic and tarragon, and use to stuff the cavity of the chicken.
  • Tie the chicken and rub the skin with olive oil. Sprinkle with Maldon salt.
  • Place the chicken in an oven dish and roast at 200°C for approximately one hour.
  • Baste the chicken with the roasting juices regularly.

Serving suggestions

  • Serve with fried potatoes or thick fries and fresh mayonnaise.
  • Section the chicken and serve with grilled vegetables and risotto.
