Yoghurt honey ice cream

The flavours of yoghurt and honey pair wonderfully. Anyone who has ever been to Greece has almost certainly enjoyed a lovely yoghurt with honey (perhaps made particularly memorable with richly intense walnuts on top).

Preparation method

  • Bring the sugar, water, and glucose to the boil. Boil for a few minutes.
  • Set aside to cool in the refrigerator. When chilled, stir in the honey and lime juice.
  • Combine the yoghurt, cream and crème fraîche and stir into the sugar syrup.
  • Churn into ice cream in a sorbetière, Pacojet or Frix-air.
  • Drizzle a little honey on top just before serving.

Serving suggestions

  • As a component in a dessert, e.g. with red fruits, citrus fruit, or rhubarb.
  • Combines perfectly with watermelon and caramelised walnuts.
  • Delicious with a fresh fruit salad.
