Preparation method

  • Cut the fillets from the mackerel, remove the bones, and remove the skin. 
  • Brine the mackerel in the salt and lemon zest for about an hour. 
  • Cook the mackerel in the olive oil at 55°C. 
  • Gently separate the fillets into segments. 

Serving suggestions

  • As a component in a composition with tomato, avocado, basil, and red onion. 
  • As a component in a composition with various preparations of beetroot, crème fraiche, horseradish, and watercress.
