Cutting products with a cutter is a technique that is mainly used to cut products into neat portions and give them a uniform appearance. Cutters made from steel or plastic are used to cut shapes out of products before processing them further. An example is cutting out foncé dough when making tartelettes. As cutters are available in all types, shapes, and sizes, this technique can be used on a wide range of different products. Cutting out vegetables, for example, produces uniform garnishes that you can use to dress the plates.
