Puréeing is a technique in which cooked or naturally soft ingredients are broken down to create a smooth mixture. Ingredients are puréed using a standing or hand-held blender with the fast-rotating blades creating a smooth mixture in no time at all. Other rules apply to potato purée; if you were to purée it using an appliance, you would end up with a glue-like purée due to the amount of starch in the product.
Can be used for: Potato, raspberries, strawberries, blackberries, celeriac, Jerusalem artichoke, aubergine, spinach, sweet pepper, courgette, purslane, carrot, raisins, apples.
Equipment required: Potato ricer / blender / hand-held blender / pan scraper / bowl.
