Avocado

Avocado is particularly nutritious. Unlike most fruits, avocados contain a significant amount of oil consisting of ‘good’ unsaturated fats, which have a positive effect on cholesterol levels. Avocados grow on avocado trees, many of which can be found in Mexico. The ‘Hass’ avocado is the top-selling variety and has a black-brown bumpy skin.
Basic techniques: puréeing, marinating, stuffing, freezing (as ice cream).
Taste combinations: sweetcorn, tomato, cucumber, red onion, fennel, kidney beans, rocket, tarragon, chilli pepper, orange, walnut, sushi, tortilla wrap, crème fraîche, Greek yoghurt, crab, anchovies.
