Cherries are small, round, fleshy stone fruit that, depending on their species, can range in colour from black to bright red, and to yellow with a reddish blush. The colour of their flesh matches the colour of their skin. These small, aromatic fruits can be categorised into sweet cherries and sour cherries. Cherries are available from mid-April until the end of August. They can be stored for one to two weeks at a temperature of between 1 and 4°C.

Basic techniques: flambéing, caramelising, grilling, preserving, marinating, stuffing, puréeing.

Taste combinations: almond, caramel, white chocolate, dark chocolate, cinnamon, brie, cream, sugar, vanilla, lemon, duck, dry red wine, mint, peanut.
