Lime is related to the lemon and orange and belongs to the group of citrus fruits. Limes, like lemon, are often used in cooking as a seasoning. The lime is smaller and rounder, the skin is thinner, quite smooth and vary from light to dark green. The sour and yellow-green flesh is more aromatic and juicy than that of a lemon. The essential oils in the peel are particularly popular in the kitchen and are often grated. Especially in the Italian, South American and Asian food cultures, a lot of limes are used.

Basic techniques: pressing, slicing, grilling, preserving, baking, smoking, grating, roasting, making ice-cream and sorbet, gelling.

Flavour combinations: smoked fish, chicken, shellfish, oyster, lamb, anise, almond, artichoke, asparagus, chili pepper, chocolate, goat cheese, mint, tomato, thyme, orange, saffron, parsley, rose, olive, coriander seed, rosemary, chocolate, etcetera.
