Pumpkins were first introduced to Europe in the 16th century. They have been used for more than 10,000 years, not only as food but also in abundance as decoration. Americans are well known for their pumpkin decorations at Halloween and their many pumpkin dishes, of which the sweet pumpkin pie eaten at Thanksgiving is perhaps the best known.

Basic techniques: baking, caramelising, roasting, grilling, boiling, braising, steaming, puréeing, stir-frying.

Taste combinations: bay leaf, cinnamon, sage, chilli pepper, coconut, orange, cardamom, saffron, vanilla, hazelnut, crème fraîche, pumpkin seeds, sweet potato, fennel, tarragon, honey.
