We often eat rabbit during the game season which runs from 15 October to 31 December. However, rabbit is hunted all-year round. The animal is about 40cm long on average. Once the skin is removed you know that you have rabbit and not hare. The meat has a light and dry colouring, has a tender structure, and has a milder flavour than hare.
Basic techniques: frying, roasting, stewing, cooking in a vacuum sealer bag, larding.
