Rocket is part of the Mediterranean cabbage family and has a characteristic sharp but full flavour. You can recognize rocket by its slender, light-green leaves with their typical shape which are often used in salads. In addition to salads, rocket can also be used in warm preparations, which results in a much milder flavour.
Rocket is originally a summer herb, but these days you can find rocket all-year round.
Basic techniques: braising, boiling, drying, puréeing.
Taste combinations: apple, bacon, cheese, mozzarella, tomato, aubergine, sweet pepper, olive oil, capers, lamb, croutons, dill, garlic, mint, mushrooms, mustard, basil, and nuts.
