The rump, an underappreciated cut of meat, can be found at the rear end of the animal's back, just before the rump cap. It is slightly firmer in texture and has a fuller flavour than tenderloin.

Basic techniques: slow cooking, marinating, grilling, smoking, sautéing, frying, poaching, glazing, brining.

Taste combinations: lettuce, red onion, fried egg, gherkin, capers, lovage, avocado, tomato, sesame, ginger, dashi, soy sauce, tofu, coriander, shiso, yuzu, kimchi, sesame, oyster, lobster, seaweed.
