Red, yellow, orange and green peppers are the most commonly known types. Peppers are green whilst growing, and change to red, yellow or orange when ripening. The flavour of the pepper also changes accordingly; ripe peppers are sweet whilst green peppers have a much more bitter taste.

Basic techniques: barbecuing, grilling, marinating, baking, stir-frying, smoking, roasting, stewing, stuffing.

Taste combinations: albondigas, chorizo, goulash, lobster, shrimp, feta, frittata, parmesan, paella, pizza, spaghetti, aubergine, garlic, olives, rocket, basil, red onion, oregano, chilli pepper, thyme, orange, stroganoff sauce.
